Đổ đậu ra mâm to, nhặt hết các hạt hỏng đi. Cho đậu vào nồi, đổ nước ngập cao hơn mặt đậu khoảng 4-5 cm. Khuấy nhẹ để làm sạch đậu, sau đó đổ nước đầu đi rồi lại cho tiếp một lần nước nữa vào. Ngâm đậu trong khoảng 6 tiếng, cho đến khi hạt đậu nở ra.
Lá dứa rửa sạch rồi cắt thành từng khúc nhỏ. Cho đậu và lá dứa vào máy xay sinh tố rồi đổ nước vào đến 2/3 cối, bật nút xay nhuyên hỗn hợp.
Sau khi xay xong, đổ hỗn hợp qua rây lọc để chắt lấy phần nước.
Tráng cối xay qua nước cho sạch. Giữ lại phần cái, cho lại vào cối xay rồi thêm nước đến 2/3 cối rồi tiếp tục xay nhuyễn. Sau đó, bạn tiếp tục chắt lấy nước ra như trên.
Cuối cùng, ta đun hỗn hợp sữa đã chắt ra ở lửa vừa cho chín. Khi sữa đã nóng và bắt đầu đóng váng trên bề mặt thì cho 1/4 muỗng cà phê muối vào, thêm đường tuỳ khẩu vị rồi khuấy cho đường tan hết là được.
Rót ra và thưởng thức nhé! Có thể dùng lạnh tùy thích.
