Sườn cốt lết rửa sạch, để ráo nước. Dùng cán dao sạch, đập nhẹ trên miếng thịt để khi ướp sườn nhanh thấm. Dùng tay thấm vào 1 muỗng canh nước mắm, chà vào miếng sườn cốt lết. Rắc 1/2 muỗng cà phê tiêu lên thịt, ướp khoảng 30 phút.
Đổ bột ra đĩa, tẩm vào miếng sườn cốt lết một lớp mỏng bột mì khô, để bột bám đều. Hành lá rửa sạch, cắt nhỏ.
Đun nóng nồi, cho dầu ăn vào, dầu nóng thì thả từng miếng thịt vào rán. Rán vàng đều hai mặt sườn cốt lết, vớt ra đĩa có lót giấy thấm dầu ăn.
Nêm nếm lại phần nước sốt cho vừa ăn thì cho tiếp thịt sườn cốt lết đã rán vào chảo, tiếp tục đun đến khi phần nước sốt dầu hào bám đều quanh miếng sườn thì tắt bếp, thêm hành lá vào.
